V Roasted Cabbage

This simple dish turns humble cabbage into something magical. With just a few ingredients and a bit of patience, you’ll create a rich, roasted side that pairs beautifully with almost anything, or stands proudly on its own.

Ingredients:

• 1 head of cabbage, sliced
• 4 leeks, sliced
• 1/2 cup extra virgin olive oil
• Crushed black pepper, to taste
• Sea salt, to taste (added later)

Instructions:

1. Preheat oven to 425°F (220°C).
2. In a large baking dish, combine the cabbage, leeks, and olive oil.
3. Add crushed black pepper, but do not salt yet, this helps the cabbage roast instead of steam.
4. Place in the oven and roast for 30 minutes.
5. After 30 minutes, remove and stir the mixture, then return to the oven for another 30 minutes.
6. After 1 hour of roasting, sprinkle with sea salt and add more pepper if desired.
7. Return to the oven for an additional 15 minutes to finish.

 Important Notes:

• High heat is key, this ensures a roasted, caramelized finish rather than a soft, steamed texture.
• No salt in the beginning helps keep the cabbage crisp during the first phase of roasting.
  

Serving Tip:

Serve warm as a side, or elevate it by combining with roasted beets and orange slices for a sweet-savory twist that’s as beautiful as it is delicious.
