V Roasted Beets with Red Onions and Leeks


A deeply nourishing, earthy side dish full of grounding flavors and healing properties.

This vibrant, oven-roasted medley is rich in fiber, antioxidants, and natural sweetness. Perfect as a stand-alone dish or a beautiful addition to your wellness plate.

 

Ingredients:

  • About 8 organic beets
  • 1 red onion
  • 4 leeks
  • 1/4 cup extra virgin organic olive oil
  • Sea salt & freshly ground black pepper, to taste

 

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. Rinse the beets, then slice or quarter them depending on size.
  3. Rinse and slice the leeks.
  4. Peel and thinly slice the red onion.
  5. Place all the vegetables in a baking dish (avoid using a glass jar).
  6. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  7. Roast for approximately 1 hour, adjusting the time based on the size of your veggies.
  8. Once the beets are fork-tender, turn off the oven but leave the dish inside for another 20–30 minutes.
