Ingredients:
- 4–5 medium beets, boiled or roasted, peeled, and cubed or sliced
- 1 cup Greek yogurt (full-fat for best flavor and creaminess)
- 2–3 cloves garlic, finely minced or grated
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar (or white wine vinegar)
- Sea salt, to taste
Optional Additions:
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped walnuts, lightly toasted for extra crunch
Instructions:
Prepare the Beets
