V Bruschetta Pasta

Simple, fresh, and bursting with Mediterranean flavor.

This is one of my most-loved pasta recipes. It's light, vibrant, and incredibly easy to make. Fresh tomatoes, garlic, basil, and extra virgin olive oil come together to create a delicious sauce that's comforting, nourishing, and full of Mediterranean flavor.


Ingredients

  • 2 small red onions, finely chopped
  • 5 large garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • 2–3 large organic tomatoes, chopped
  • 1 tablespoon dried oregano
  • 1 bunch fresh basil, chopped
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 cup crumbled feta cheese
  • Your favorite pasta, cooked according to package directions

Instructions

  1. Heat the extra virgin olive oil in a large sauté pan over medium heat.
  2. Add the chopped onions and cook until soft and translucent.
  3. Stir in the garlic and sauté for another 2–3 minutes, being careful not to let it brown.
  4. Add the chopped tomatoes and cook until they soften and become slightly chunky, gently mashing them with a spoon as they cook.
  5. Stir in the dried oregano and season with sea salt and freshly ground black pepper.
  6. During the last 1–2 minutes of cooking, add the fresh basil and gently stir.
  7. Toss the sauce with your cooked pasta until well coated.
  8. Top with crumbled feta cheese, if desired, for a creamy Mediterranean finish.

  • Whole wheat or chickpea pasta adds extra fiber and protein.
  • Add grilled chicken, shrimp, or white beans for a heartier meal.
  • Finish with an extra drizzle of premium extra virgin olive oil before serving.
