This Greek Salad in a Jar is one of my favorite ways to enjoy a classic village salad. It's simple, portable, and so much fun to make. Every bite brings back memories of long summer days by the sea and the pure, honest flavors of Greek home cooking.
Perfect as a light vegetarian lunch, a picnic favorite, or a fresh side to your favorite Mediterranean meal, this recipe brings the joy of Greek summer eating wherever you go.
🥗 Ingredients
(All organic, if possible)
- Paximadia (Greek barley rusks), or rusks of your choice
- Cherry tomatoes
- Black Kalamata olives
- 1 green pepper
- 1 onion
- 1 cucumber
- Capers
- Goat cheese (feta)
- Dried oregano
- Good quality extra virgin olive oil
- 1 big jar
👩🍳 How to Make V Greek Salad in a Jar
Step 1: Start with the Paximadia
Crumble the paximadia into the bottom of your jar. If they are very hard, moisten them lightly with a little water first.
Step 2: Layer the Tomatoes
Chop the cherry tomatoes and add them on top of the paximadia so their juices soak into the rusks.
Step 3: Add the Olives
Add your black Kalamata olives as the next layer.
Step 4: Add the Pepper & Onion
Chop the green pepper and add it to the jar, then top with the chopped onion.
Step 5: Add the Cucumber & Capers
Peel and chop the cucumber and add it to the jar, followed by the capers.
Step 6: Top with Feta
Crumble the goat feta over the top.
Step 7: Season & Shake
Sprinkle with oregano and drizzle generously with extra virgin olive oil. Leave some room at the top of the jar so everything can mix. Close the lid and shake until everything is combined!

Leave enough space in your jar! That's the secret to a perfectly mixed salad. If you're packing it ahead of time, add the olive oil just before shaking so the paximadia stay perfectly textured.
