Ingredients
- 8 organic beets, rinsed and trimmed
- 1 red onion, thinly sliced
- 4 leeks, cleaned and sliced
- ¼ cup organic extra virgin olive oil
- Sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
Step 1
Preheat your oven to 425°F (218°C).
Step 2
Rinse the beets thoroughly and cut them into quarters or slices, depending on their size.
Step 3
Clean the leeks well and slice them into rounds.
Step 4
Peel and thinly slice the red onion.
Step 5
Place all the vegetables into a large baking dish.
Step 6
Drizzle with the olive oil and season generously with sea salt and freshly ground black pepper. Toss everything together until evenly coated.
Step 7
Roast for approximately 1 hour, or until the beets are fork-tender. Cooking time may vary depending on the size of your vegetables.
Step 8
Once cooked, turn off the oven but leave the vegetables inside for an additional 20–30 minutes. This allows the flavors to deepen and become even more delicious.
