Greek Potatoes ❤️🥔

Simple, comforting, and bursting with authentic Mediterranean flavor.

These Greek Potatoes are one of my favorite rustic everyday dishes. Tender potatoes are slowly cooked with sweet red onions, ripe tomatoes, garlic, fresh parsley, and oregano, creating a beautifully rich and wholesome dish with the simplest of ingredients.

Perfect as a satisfying vegetarian main, a hearty side dish, or served alongside your favorite Mediterranean meal, this recipe brings the warmth and simplicity of Greek home cooking to your table.


🥔 Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 red onions, chopped
  • 7 large potatoes, cut into 2-inch pieces
  • 4 garlic cloves, minced
  • 4 large ripe tomatoes, seeded and chopped
  • ½ bunch fresh parsley, chopped
  • 2 teaspoons dried oregano
  • Salt and freshly ground black pepper, to taste

👩🍳 How to Make Greek Potatoes

Step 1: Sauté the Onions

In a large pot, warm the extra virgin olive oil over medium heat. Add the chopped red onions and gently sauté until they become soft and translucent.

Step 2: Add the Potatoes

Add the potatoes to the pot and carefully move them around, allowing them to gently cook with the onions and olive oil. After about 3 minutes, add the minced garlic.

Step 3: Build the Flavor

Sauté the potatoes and garlic for another 3–4 minutes, stirring gently so everything becomes beautifully fragrant.

Step 4: Add the Tomatoes & Herbs

Add the chopped tomatoes, fresh parsley, dried oregano, salt, and freshly ground black pepper. Stir everything together gently.

Step 5: Slowly Cook

Lower the heat if needed and allow the potatoes to slowly cook together with the tomatoes and herbs. Stir occasionally and carefully, until the potatoes are tender and the tomatoes have reduced into a rich, rustic sauce.
